Ishiya Kaiseki Cuisine is crafted by the chefs at Motoyu Ishiya with great care, using rich seasonal ingredients nurtured by the beautiful four seasons of Kanazawa, along with traditional seasonings that have been beloved in the city for generations. Enjoy each dish's gentle flavors at a leisurely pace in the relaxed atmosphere of Motoyu Ishiya.

Ishiya Specialty: Jibu-ni

Jibu-ni, a representative dish of Kanazawa. At Motoyu Ishiya, we serve piping hot Jibu-ni in a small earthenware pot, heating it over a flame for you to enjoy.

Noto Beef Stone-Grilled Steak

A5-ranked Noto beef features tender red meat that melts in your mouth, with rich flavors that fill your palate. Sizzle it on the stone and enjoy it with our homemade ponzu sauce or miso.

We focus on using locally sourced eggs and rice, as well as seasonal Kaga vegetables that are gentle on the body. Our aim is for guests to enjoy a delicious breakfast and feel energized from the start of their day. Each dish is a point of pride for us and has received great acclaim from our guests.

Our inn retains the charm and atmosphere of a traditional building, and it is not barrier-free. Elderly guests or those with physical difficulties may find the stairs and other areas inconvenient.
In addition, the surrounding area offers nostalgic Japanese scenery, and at times insects may enter when the windows are opened.
Because the building is located at the bottom of a valley surrounded by low mountains, the entire facility remains in a constantly humid condition from the start of the rainy season until mid-September. For this reason, every guest room is equipped with a dehumidifier, air purifier, and ventilation fan to help reduce dampness and musty odors as much as possible.
We strive to preserve the tranquil, nostalgic ambiance of a retreat in the mountains. While this may cause some inconveniences for our guests, we kindly ask for your understanding.
